Whenever I’m asked to recommend easy dishes for beginner cooks, I always suggest keeping it simple. To my mind it’s better to become comfortable with a small but versatile repertoire of staple dishes that suit many occasions than to master a couple of blockbuster dishes you can only break out on special occasions. If you can pan roast a chicken thigh or a piece of fish, whip up a pesto or other simple pasta sauce, and turn out a killer vinaigrette, for example, you’ll never be far away from a home cooked meal that will please just about anyone.
